Do some research on here and other websites on destinations that you fancy because you can literally get married anywhere you want.
A friend of mine got married in St Lucia some years ago and it was all arranged by the tour operator and reps at the resort they chose. They actually got it free with the holiday as it was a pricey one - but I would think it costs around £500 for everything done for you. Most places you have to be in the resort for 5 days before the ceremony. Generally I think the basic cost you pay includes, wedding venue, all legal documentation sorted out, minister of some sorts, flowers and maybe musical accompaniment, a meal at the hotel's best restaurant is usually thrown in, a video/dvd of the proceedings and optional extras might include everything from having hair and make up professionally done to having a steel band or traditional band from wherever you go.
Like I say, best get yourself a load of brochures to give you ideas - and ask your local travel agent for pointers as well. That'll set you off in the right direction.
Oh, and congrats by the way!
Sorry to be bearer of bad news but you will not be allowed to marry in the Maldives due to the countries religous beliefs
