I've been to Lanzarote Bay Aparthotel it was an apartment with living room, bedroom bathroom and kitchen area, its AI but used to be self-catering.

Going to Marvell Aparthotel in Ibiza this year. Its the same.

The teguisol in Lanzarote is also the same, it has one and two bedroomed apartments and is AI. The canaries is your best bet for this kind of thing. I think there are a few AI apartment complexes in Fuerteventura as well.

Turkey also have some great AI hotels with apartment style accommodation. We've stayed in 2 bed 2 bath apartments at Club Hemera in Side and the Ephesus Princess near Kusadasi and had duplex 2 bedrooms style rooms at the WOW Kremlin Palace (Lara Beach) and the WOW Resort in Bodrum. They were all 4 & 5* hotels with excellent facilities and were all booked through Thomas Cook who seem to have 2 bedrooms and suites at hotels where other tour ops only offer standard rooms. Thomas Cook also offer suite accommodation at the Club Letoonia in Fethiye which gets good reviews and has a wonderful setting and Lykia World near Olu Deniz.

If money is no object, the Hillside Beach Club near Fethiye is supposed to be the best AI in Turkey and they offer 2 beds at no extra cost but you certainly pay handsomely just to stay at this hotel! Last time I priced it, the cost was nearly £7500 for 2 adults and a teenager for two weeks in July in school termtime!

There's a lot of 2-bed properties out there, you just need to be patient and trawl through lots of brochures!

Try proutor hotels safari park sa coma majorca offer one bed apartments on all inclusive basis as well as twin rooms. Try thomsons or portland or go direct. We got a good deal through portland for 10 nights cheaper than a week same time of year.
