NCL is definately the most informal
you can do most cruises informal we had no problem on RCI Independance.
Food is potentialy an issue NCL have a lot of choices but "trad british" would stretch most of them as it would on all the american ships if you igore the "american" food the rest is fairly international
What is he looking for? Pie and chps? can you give a bit more info.

Plenty of non fancy options on the main menus, a tex mex, good buffet(but back bacon black pudding will be absent at breakfast) the asian is nothing like a UK chinese, Indian is good but vegi most of the time, Steak house is good, bisto is french, there is an italian(does he eat piza?)
Thomson may be a fit you an do that informal as well.

I would say NCL is probably the alternative, not sure about Thomson as never been on them.
NCL do the most delicious crispy bacon. 
He likes plain food - steaks, roast beef - that type of stuff. Won't eat Italian, ie pizza. Like taking a 2 year old on holiday!

Cagnies steak house every night might be an option but at an extra charge.
