Guess you will have to find a little shop selling drink and get some in or go on the wagon.
I would be stunned if hotels stopped selling alcohol. The intention is to stop Thai's getting rowdy and drunk not tourists!
Usually the alcohol ban is just for the day before the election and the day of the election itself. But it looks like that the day or two after the election might also be dry days, probably to cut down on the chances of violence if, for example, the wrong people win.
But in reality you'll still be able to get a beer without too much hassle. Teapots have been used in the past or just keeping bottles hidden out of sight under the table is another method. The good thing about Thailand is that there's always a compromise possible where daft laws are concerned . . . unlike the UK for example.

To extend your holiday try this, jail time for any establishments of any description selling alcohol and 6 MONTHS JAIL TIME FOR ANYONE CAUGHT DRINKING! Tourists' enjoyment is obviously of no major concern to the authorities
In practice this means that last night bars were shut, except for ones that must have paid to stay open. Restaurants were opne as usual and all restaurants were serving alcohol, same as usual.
However, if you order beer it was served in a paper cup - rather than having a glass & a bottle on the table. Cocktails still came in a regular glass as they don't look like alcohol.
So out of all the people in the beachfront restaurant I was in last night none were arrested, neither were any elsewhere on the island and I doubt if you'll find any reports of arrests of tourists drinking beer out of paper cups across Thailand.
