Wow, that's a real how long is a piece of string question! South Goa is generally quieter with more resort hotels- North Goa much more hectic but you can find quiet parts of it - especially the beaches north of Baga. Baga,Calangute and Candolim all kinda merge into each other with Calangute the busiest and Candolim/Sinquerim quieter but catching up fast.

I would nosy around this site - there's tons of resort and hotel information and narrow things down a bit. You can then ask specifically about a resort or hotel.

Wine in Goa is either not very nice, or imported and relatively expensive. Much better to drink the local spirits with mixers or try the beers.

Got to disagree with Roma about the quality of the wine.

Relatively expensive at 6-7 pounds per bottle, but some restaurants charge as little as 350 rps for vin ballet £4.50'ish (ice and spice reatsaurant).
There is another brand of wine called, I think, Sula and they do a very good blush wine albeit a bit dearer,at around 900 rps for a bottle(mermaid restaurant)

Brits, not sure what you mean by quiet (days or evenings etc), but candolim is fairly quiet on the beach in comparison to places like the Costas etc, and in the evenings almost all restaurants are geared to sensible background music, even the live music is not loud, leaving you to chat etc.
