Have you looked at the Hotel Louis Creta Princess on Crete? The reviews are good, it looks lovely and has a beachfront location with kids clubs. The only downside is it's location. It appears to be rather isolated.

If you want more information on the Hotel, try holiday truths review page, and also trip advisor, where the hotel has been voted '2008 travellers choice - best hotel for families in Europe'.
I would also recommend any Iberostar hotels in Greece, as these Hotels are of a high standard, in terms of service, food, entertainment and overall quality of their hotels.

We're off to Kiotari Miraluna in Rhodes. Location a bit out of the way but lots of First Choice Kids Clubs, and we are going to hire a car to go exploring too.
