Have only been to Sharm once, and found most hotels were AI with nowhere to walk to in the evening. There is Naama Bay but not entirely sure if this is really suitable for folk in their 70s. We found it exhausting just walking down one side of the street with all the hassle from shop keepers and restaurants alike. We have since discovered El Gouna, still on the Red Sea and a totally hassle free resort with both the marina area or downtown to walk around/eat. There is a mixture of AI and B and B hotels here, mostly B and B as there are plenty of places to eat.

another option would be to choose an A/I hotel in the ras um sid area as close as you can to old sharm.
Some A/I have a few shops outside but not a town to wander.
Having said all that it is very easy to get into Naama bay for the evening using courtesy transport that the hotels normally supply or taxi . Most hotels are with 15 mins .
Havnt stayed in El gouna myself but Im hoping to get there soon .
PS weather should still be very good .Egypt is a year round sunshine destination that could be into the 50s during our summer months and probably early 20s December/january. We usually go easter and the temp is around 30 then
