There is a huge thread on here already with most of the answers to your questions so no need to defect to the competition. ;) However I will give it a go at answering in case you cant find it.

1) Yes in the a la cartes Men are supposed to wear long trousers, a few were wearing jeans. Most of the ladys were smart/casual ie summer dresses, nice skirts with pretty strappy tops. There were also lots of silver strappy type sandals around.

2) sorry not sure on junior suite location, there are quite a few different blocks about and some have mixed rooms in them.

3)I would tip in low value LE, you should be able to get these once you get to Egypt as Travel Agents/Foreign Excanges seem to only give high denomination notes. I would say the second best thing would be dollars. Dont tip in pound coins as their banks cant change them. they have no official way to dodo this apart from waiting until they have got a few and then badgering guests into changing them into a fiver or a tenner, then they still have to go and get them changed into LE.

I would say though that its OK to give a five or ten pound note to your room boy for cleaning th room at the end of the holiday if you have run out of LE.

4 & 5. Not sure about the zip-wire but think price is on the main thread. Same with internet, although my daughter said it was very expensive and we went over to the mall to try and use it over there as it was a lot less. But she wouldn't go in as it was full of Egyptian men and she was too embarassed to go in on her own.

6) not sure on plug adaptor think it was the normal two pin.

7) Lots of shops outside the complex. Two malls. They refer to one as the egyptian mall, think that was because it had a few spice shops, the other as the English Mall as I think it has a couple of Designer Outlets. If you go to the welcome meeting they will explain this to you there. IMHO I still think Namma Bay is better of a night as it has more atmosphere than Nabq Bay, so if youa re there for a fortnight you might want to do a trip to Namma Bay just to make a comparison, although you will get more hassle there.
8) I think it's great to be able to bring 1000 but I don't think you will need it unless you go mad and book endless beauty treatments and let your kids spend the whole fortnight on t'internet. We were only there for a week with 2 kids simialr age to yours & apart from my DD's Scuba Diving (which I dont really count as a normal holiday expense) we got through about 300GBP, but we dont buy presents. Re the split of your money, I wouldn't bring that much cash. I would bring 100GBP worth of Egyptian to tide you over, and 400GBP to change when you get there as it's a better exchange rate.. Loads of banks if you come out of the hotel and turn right walking past the Laguna Vista Resort. I would then just bring a couple of bank cards (in case a machine eats one lol) and a credit card. The same banks have cashpoints that give out LE. I wouldn't keep 1K in cash about even in the safe.

Hope this helps and you have a great holiday. It's a good hotel designed for Brit Families so I am sure you have made a good choice.
