We're thinking of a weeks holiday in Italy (first time there) and would like to find a cheap flight, hire a car and do a bit of traveling, stopping in bed and breakfasts.
We know nothing about Italy, or where to visit.
We'd like to visit beaches and also see some of the sights. We imagine Italy being full of little, out of the way villages.
Can anyone offer advice?

Book with Ryanair/Easyjet/Jet2.com as quick as you can, the earlier you book the less the flight price is, Take a bus from the Airport you arrive in and go to the nearest large City hire the car, Head away to where you want to go, Btw you have to pay on Italian motorways, And Italian drivers are crazy and have no time for no one on the roads, I would spend a few days in Tuscany and then head away to sorrento
There is no cheap way to do this from America. Only expensive and less expensive.
Am I missing something, can't find any reference to someone coming from America.

Staying in hostels and the like is an excellent idea. Staying in an would also save some euros.
