I am looking for a holiday destination for May/June time in the carrabean. Easy you say?! Well heres a few more specifics

I originally set my sights on Cuba and the Playa Pesquero which looks fantastic but then read about the food and the options for tourists and now I'm thinking this might not be for me.
So, where to go? Dominican Republic is out as the missus went there last year and we agreed to go somewhere new. We have a budget of £2000 for the holiday (give or take a few quid) which should get us All inclusive at a minimum of 4* hotel. Good snorkeling would be great and great food is a must. The good lady is a Vegiterian so this would need to be easily catered for. We want a place which has a lot to do, day and night so a few bars and A La Carte restaurents on top of the standard buffet would be brill.
Ideally I want to book with Thomson, First Choice or Hayes and Jarvis,
So... should I have stuck with Cuba or is there another place which will fit my needs more?
