There is a site called the man in seat 61 http://www.seat61.com which mainly deals with worldwide train travel, but it also has a great section on ferry travel. Click on ferry shop and it will open up the ferry section, and use the drop down boxes.
You will have to travel to Valencia by car or train and take the ferry to Mahon from there.
