Apart from the main Hippy Market in Es Cana (Wednesdays), I believe there are smaller markets held around the Island on other days.

We stumbled across one in Paya den Bossa a few years back. Unforunately, can't remember which day or if it is still on.
It was at the end of the resort near the water park i think and spread around one or two of the hotel frontages.

Las Dalias is small but interesting on a Saturday morning and can be found at the same named bar on the left just before San Carlos coming from Santa Eulalia,John.

Hi Rookie,
There is a really great market on Formentera in San Fransisco every Sunday and if you catch the glass bottomed boat (Pirate Petes) it leaves Platja d'en Bosa at around 10.15am each day, then heads further up the coast to Figueretes before heading out to Formentera. The boat is great and the crew very friendly and as for the market, well its much the same as the one in Es Cana but you have the added bonus of being on a paradise like island. Boats leave the marina La Savina at 6pm and reach Platja d'en Bosa at around 6.50pm. But best of all the cost is really low, only around 14-16 euros for an adult return.

Avoid the Es Cana Hippy Market like the plague - it's horrible - totally claustrophobic - as someone has previously mentioned the Las Dalias on a Sat morning is much better - but get there early
