I don't know what will happen this year, but Thomson tend to sell their unbooked rooms in Italy, Croatia etc, to stop UK visitors getting their hands on cheap deals, and therefore encouraging them to book early the following year.

Don't know if it works, but we normally expect an influx of our Italian cousins, who promenade a lot, but tend not to spend a lot of money (well not in the bars at least!)

Try DIY, if you can find available Hotel rooms direct.

Prices are really high in the school holidays anyway but with the weather being so poor HERE then I think that the tour operators feel that it is a sellers market and if the rainy summer continues when the schools break up then more families will become desperate for some good weather and book late.
This year real late bargains may not be available for the 6 week hols.
I was going to wait for a late deal but have booked flights and accomodation separately costing around £1050 for 4 of us for 1 week SC , I was being quoted prices od £1600-£1800 .

£250 per head for a week in Spain during the holidays doesnt seem too bad.

I understand tour operators have a lot of stock to sell so there are bargains out there. maybe not in Majorca though as the tour operators have less and less stock there as the DIY market/Lo cost airline market is so strong that they do not commit as many charter airline seats to the island anymore.
