As for spending money I cant help you on that, I have visited extensively the Caribbean area but never on a cruise ship.
i will respond to your queries for you in the next few days. have just this morning got back from an OV2 cruise around the caribbean and can hopefully answer any questions but right now need sleep and have to sort out washing.

We spent a week on OV2 last year - 2 adults and 2 children. We did 3 organised trips and our total bill for the week was just over £400. This included a couple of gifts, lots of alcohol, numerous bottles of water for the 2 cabins and the deal on soft drinks which basically worked out half price. Hope this is useful.
we did one trip independently and the rest with the ship.
we did the dolphins on our own because it worked out at £20 cheaper per person and we got to do more with the dolphins than the ships trip. this was in tortola.
yes most of the trips can be done independently and the majority will be cheaper but you have to ask yourself if you want the hassle taken out of it by letting the ship organise it and if the extra is worth having that hassle taken away.
if you want to do the st kitts railway, it is only available through the ship. (apparently)
i thought some of the trips were more reasonably priced than i thought they would be. we did the jeep trip in isla margarita which was great, but think kids have to be 13 (could be wrong - i didnt see any on the trip) trips can range from £30-£150 but the ones in excess of £100 are usually helicopter trips.
as for drinks, we don't drink but i thought drinks were reasonably priced and if you go on their website you can check out all of the drinks prices.
st maarten is the best port we went to for duty free.
