I have been on Golden Princess and not on Celebrity Mercury but Galaxy and Century which are Sister ships.
Golden Princess is a much larger ship and she has great facilities and the both traditional and any time dining. I enjoyed this ship but Celebrity just has the edge for me.
Mercury is smaller and more intimate. The general standard of service on Celebrity as well as food is more refined. If I had to choose I would go with the ports and also the price. If it is a lot cheaper to cruise with Princess or there are better Ports then this could just sway your decision.
Don't know what advice others will give you. Now I am cruising with Cunard on QM2 but cruised twice with Celebrity in March and October of 2007 and it has been my cruise company of choice for a good number of years.
