Not been to all but those we have took $ for touristy things like tours taxis and many shops/bars, some were a few years back.

We went to most of these ports when visiting the Panama Canal. We only had US dollars, and used them at all times. We used the local transport and paid for our tours locally in US dollars.

You'll find that any areas near the port cater for the ships crew in terms of bars and restaurants, they also use dollars.

I can't say about Mayreau, because on our last caribbean trip this island was cancelled due to bad weather.
