I am wondering if it would be OK to buy a couple of bottles of Pimms at the Airport to take out to Menorca, but am not sure if it's OK to do so and would it be a litre per adult as I am kind of assuming it would be classed as a spirit ?

Yes I think Pimms is classed as a spirit. As you are travelleing within the EU you are allowed to take 10 litres per person! It is outside the EU (eg Canaries, Egypt) where you can only take one each. Enjoy
