I would say that if you can't get one with air conditioning, try and make sure there are fans about or avaiable to hire. Your main problem without it will probably be getting a comfortable nights sleep.
Years ago we stayed in a 3 star apartment complex on Minorca at the same time of year with no aircon, just a ceiling fan over the bed and we managed, but the aircon we had last summer was definatly better for sleeping purposes.

For me, even though I don't have young children any more, various factors need to be taken into consideration, and Aircon was a must and if the apartment/Hotel didn't have it I would think twice about it - I guess it's down to personal choice
We have travelled to Menorca the last few years peak season (Jul/Aug). Last year we had a private apartment with only ceiling fans and found these adequate, however, the temperature was much cooler than the same time the previous year (high 20s as opposed to high 30s). Not sure we'd have coped with the heat the previous year had we not have had air conditioning. My advice would be to try to book one with airconditioning as a preference just in case.
The reason most villas dont have it is owners dont want guests using it wrongly ie leaving open doors /windows and also there is frequently a breeze, so the heat is not there. Better is inbuilt mosquito screens and open windows.
