All you need to do is check in when you get to these stores on the foursquare app and then pay with your amex. Next statement you will see the money paid into your amex account.
Do you have to link your AMEX to four square somewhere online Fiona, I've heard about but not done it before.

Spend £50 in Debenham and get £25 back. I just bought a gift token. Off to get a basic amex card so that I can the most of this money give away
