The hotel is right on the beach which is lovely. I'm hoping the weather will be fine, at least at the start of the month, as I hope to be out there about the same time. I've been several times at that time of year but you can't be sure of continual sunshine in November. I'm not sure if the sunbeds are free but if not they will only be a couple of dinars a day. The Medina is only a short walk away where you can do all the haggling you like, or there is the Soula Centre which is a very large fixed price shop if you don't fancy haggling.
I haven't stayed at the hotel but usually call in to use the loos when on the beach.

There are reports on the hotel in the Hotel Reports section of HT so you can check it out. Apparently the entertainment isn't brilliant but you can use any of the other hotels if you want a change. In one direction you will find the four hotels of the Marhaba complex and the three El Hana hotels in the other direction, all of which have entertainment. You can also go into Port El Kantaoui very easily for a change (about 3-4 dinars [£1.50/£2] in a taxi). The Noddy Train is another fun way to travel and very cheap, as are the little purple tuktuks (3 dinar return from PEK to Sousse but hold on tight.)
I think all the water sports should still be running, including parascending but it will depend on the weather.
Incidentally, I've just checked up and November 3 - 5 and 7th are public holidays in Tunisia (presumably because it's the end of Ramadan). It won't affect you but you may find banks etc. closed. As ATMs are inclined to run out of cash during these times just make sure you have enough to keep you going if you are there then.
I hope you have a good holiday.
