Firstly you can go over to the Volcano and walk up it and admire the view across the Caldera to Thira. There is the archaeological site at Akrotiri, the bus will drop you at the end of the road and you can walk down to the village and then get a bus out.
There is also the old capital city/town up on the mountain that separates you from Kamari and the airport. From here you can see at eye level the planes landing !! Take a bus to Oia and see in the flesh, the sites used for pictures on most Greek postcards, whilst here, admire the sunset whilst having a drink or a meal even. By the way, all buses go to Thira before going on to other destinations. You can also admire the sunsets from Thira.
In Perissa you've got the Smaragdi Hotel which puts on an excellent Greek Night on Saturdays, you Book up in advance but it is well worth it. This Hotel is in the Kosmar Brochure and also has its own website.
