Wherever you go over Xmas/New Year it will be expensive - in the Canary Islands it can sometimes cost more at Xmas than July/August.
Weather in the Canary Islands will be pleasant enough, especially with a young baby. Egypt may be a tiny bit hotter. Cape Verde is a similar flight time to Egypt and a bit further south than the Canaries and Egypt, so will probably be hotter.
Price-wise unless you can wait until just before or after Xmas for your holiday it's going to cost quite a bit! Prices drop dramatically if you fly out straight after New Year or are coming home before Xmas Day.

Cost isn't a huge factor - we are prepared to pay the premium for going at this peak time, it's just that Sharm seemed to particularly rocket compared to other places at the same time of year. The last couple of years we've done either the Middle East or Caribbean but we were looking for a shorter flight time this year.

I have been to the Canaries in January and February and found it was cold at night.Sharm was warm when we were there last December.The prices may come down nearer the time as if the prices are high there wont be as many folk booking.
