We have just come back from Sidari, and there was quite a few wheelchairs around. Sidari is reasonably flat but the kerbs are rather high, although it was possible to use a wheelchair without to much difficulty.
I realise that this post is a long time after you posted your question but I have only just joined the Forum.
As a wheelchair user myself then I can understand your request. Sidari is a flat resort but as already mentioned the kerbs are high in the main streets, and people unhelpfully do park in some of the areas where it is easier to get onto the kerbs.
You would also need to be careful as to where you stay as there is a lot of accommodation which is a long way out of the town, some on very busy roads without pavements. The brochure information may indicate that the accommodation is only a short walk from a shop, the beach or a restaurant but it may be a very long way from the main centre of Sidari can walking along at night can be hazardous, so please be very careful about exactly where the accommodation is in relation to the town centre.
We go to Sidari every week to shop but stay in Roda. It is a smaller resort but offers everything and getting around in a wheelchair is easy. The roads are not so busy and there are many pavements to negioate. The roads are fairly wide and I feel extremely safe around the village. The accommodation is more central too, so you are never too far from things.
If you would like more information on the village of Roda then its own website can be found under officialroda in a search.
A hope this information is helpful to you. Hope you have a great holiday.
Best wishes
