Have a look at Skala in Kefalonia, Sidari in Corfu and Tsilivi in Zakynthos. All these would fit the bill.
Try western Crete, Rethymno or Chania, We stayed at "Petradi beach hotel", nice clean family run, not far from the old town of Rethymno (walking distance) with it's history and cosmopolitan bars and clubs,
The hotel has it's own pool and leads onto it's own private beach where you get waiter service to your sun-lounger.
and try to have at least one evening meal at the hotel as I was really impressed with their menu and service, (their carbonara is to die for)
There is also the opportunity to take excursions like scuba diving and a day trip to Santorini, you will find more info on these in a booth next to the public toilets in Rethymno old town,

lindos in rhodes ticks the boxes in my opinion, lovely place roof top restaurants plenty of life but not ott, tsilivi has a decent beach and the restaurants with plenty of bars, but not very greek, the rethymnon area of crete is also great, maybe not lively enough, cant see sidari ticking enough boxes, sorry sidari lovers.
Thannk you for the advice! I have been looking at Sidari but don't think it's for me so decided to do some reading about other Greek islands. I like the sound of Kefalonia so am looking there at the moment.
