it is about $52 per person & you pay it,at the airport.

We have booked with First Choice/Thompson to go to Cancun in November, It states on the invoice "inc all taxes" would this include the departure tax?

We have just returned from Cancun having traveled with Thompson and the departure tax was not included. It's also better to pay it on pesos rather than dollars or sterling, although rates and tax change.

Whats the departure tax in pesos?
Not 100% but I think it was about 675 peso which works out around £31 at today's rate, as opposed to £36 in sterling.
