There is a thread about this on cruise critic. Haven't done it myself- we just used a guidebook. According to people on the site, guides charge 100 euro for 2 and half hour tours, but will try to get a group of 10 people together to share the cost.

We got the train from Sorrento to Pompeii, then did the tour of Pompeii ourselves,
at our leisure using a guide book, and had a great time.
Next day, we got the train back to Pompeii, then from there used the service bus
to Vesuvius. There are also guides on the mountain side offering
their services, but we also did that ourselves, once again with the help ofa guide book.
