you SHOULD be OK with getting visas - as long as you make sure you dot all the 'i' and cross all the 't' when completing your applications.
There are many horror stories of rejected applications, for reasons varying from the signature on the application doesn't match the application form to not sending a letter from your employer saying you're visiting India for tourism and no other reason.
There is a list of professions that require such a letter on the VFS website, but recently I've read of a few other people who've had their applications returned asking for this letter - inlcuding one lady who manages an animal boarding kennels.
If you're taking children (even your own) you need to send additional documentation.

Alternatively, you could pay extra and use an agency to get your visas - but you will pay a premium for that service.
The deal is flights from Gatwick to Goa Direct 0n 27th Jan 2011 for 14nights £354 per person including all taxes and baggage. Pretty good price we think.
Don't forget to take off weekends and holidays.
If you're doing a postal application, add the time it will be in the mail system, add the time it will be in transit to and from High Commission of India (probably a couple of days).
If you don't think you can get visas in time, no matter how good a price it is, there's no point spending £700+.
