We are also new to Gran canaria after trying all the other islands..and we are into quieter places too. We are going on March 20th to Playa Taurito and staying at the taurito Princess. Apparantly that is a really quiet resort with its own little beach and a short bus ride away from puerto rico and playa mogan. There are a few little cafe's and bars, but nothing too lively so all the reports tell us. Will report back when we get back.
Mogan is picturesque and quiet, it has a lovely harbour with lots of restaurants around it, it also has a small beach. A regular ferry service takes you to Puerto Rico.
If you want a quiet resort with nice restaurants, try Amadores. It is round the coast from Puerto Rico (with a lovely walkway to PR). It has a promonade of nice restaurants and a fantastic white beach, the resort is still up and coming making it quieter than its neighbour.
There is a lovely big shoe shop in Mogan

I would strongly recommend Maspalomas. This May is the 4th time for us. Playa De Ingles is where the teenagers go and familes (Go-Lightlies we call them, like chavs)
Maspalomas has designer shops and plenty of nice restaurants.
We like it quiet too. The good thing about the resort is you have various commercial centres so you can eat different places each night. or visit the Boulevard which is more upmarket.
Los Tunos aparatments are good for a cheapy, although we got 7 nights half board to Gran Hotel Costa Meloneras for £449, inc flights.
Peurto Rico is good for the dolphin trip and about £15 in a taxi, so do that as a day trip, that too has the families ( i dont like it but do the dolphin trip)
The taxis are cheap so you can go many different places.
Hope that helps

Had a holiday in Porto Rico 2 years after many holidays in Teneriffe. Disapointed in PR. But went to Pourto Morgan by boat one morning for the market it was great. If I ever went back that is where I would want to stay. Although just a small town, it has everything you could want for a relaxing break.
