There's an inherrant problem with fishing from the beach near to hotel / tourist beaches; they are often disturbed beaches with little habitat to make good fishing, and swimmers / watersports from the beach can be in conflict. This limits what species there are to catch. Having said that, you can have lots of fun catching small species such as Wrasse and Bream around rocky areas. Many of the Greek Islands offer limited fishing from the beach, as well the the Canaries and Balaerics. You'll not catch your next meal, but all these places will provide good fishing. Just use light lines and small hooks and you'll get plenty of bites. I wouldn't consider Egypt as the water is too shallow in most cases and you have to walk out several hundred meters in most cases to find water above your knees. Some of the Caribbean Islands offer excellent inshore fishing, for example St Lucia and Cuba, it depends how far you want to travel.
If it's just a bit of light sport, Icmeler in Turkey is quite good off many of the jetties / harbour walls, and the breakwaters in Costa Tequise, Lanzarote is quite good too. These don't have AI hotels on the doorstep though.
