We went on the boat trip to Saono Island (beautiful) and a trip to Altos De Chavon. I can highly recommend both of them. Saono Island is beautiful, the trip includes a stop off at a natural swimming pool in the middle of the sea where you can pick up starfish etc. Truly out of this world.
Altos De Chavon included a 4 course meal at the restaurant overlooking the River Chavon (I think that's what it's called). Again, I can recommend this too.
There were loads of other trips available and I'm sure swimming with dolphins was one of them. I hope you have a great time.

There are lots of tips and yes you can swim with the dolphins in bavaro i believe. If you booked via thomson you can book all your excursions in the shop or online. We did the Outback the Isle Sanoa.
Very friendly with good food and one of the best beaches we have ever been to. My daughter wants to return there when she gets married! We also recommend the Saono Island trip and also The Monster Truck Safari was great fun.
I see you have changed hotels since you posted this original query. There is a large thread on the Iberostar Haceinda Dominicus with a lot of useful info.
We haven't been back since 2005 as we have been elsewhere, but at the time we were there trips were available from the reps and from the hut in the grounds.
There is a little italian style village (Altos de Chavon?) close by which is a tourist mecca, there are obviously the monster truck safaris. Saona Island is a short boat ride away. We did a snorkelling trip to Catalona Island, but watch out for the insects on the island. We also did a day trip to Santo Domingo during a tropical storm, for which the highlight of the day for me was an unexpected stop at the aquarium. There were some massive fish there and it was an interesting interlude.
Check out the other thread for more info.
