Regarding the flights easyjet fly Newcastle to Rome for around £128 return,

Jet2 fly Newcastle to Pisa(Florence) for around £158 return.

But these are this years prices,but i wouldn't think they will be much more next year,the thing is that they haven't released next years route and prices yet.
So it might be worth waiting and keep going on their websites to see when they do,you usually get cheaper flights the earlier you book.

If you've found accommodation that you like then yes i'd do that.

Knowing that these budget airlines do flights to the region where you are staying, should mean that you will be able to get cheap flights there.

But keep going onto the airlines website for next years prices(or you can register with them, and when the new schedules come out they email you), as i said before that the cheapest fares are usually the first to book.
