Well I would love to help but its been a few years since I went to KS. All that I can say is that we rarely had a disappointing meal. We ate Thai almost all the time.
You can hire a jeep for 500 BHT or less for a block booking. Look around and get a deal on car hire. Everyone drives so slow. Drive round the island under 2 hours.
Chaweng can be be expensive in comparison to other parts of KS but just look around and you will find plenty of good restaurants, cheap Thai food EVERYWHERE.
Wine is expensive though.

If it is Centara at the south of the island, then the restaurant at Laem Set is excellent (or was 5 years ago). It's just along the beach. Very nice beach down there aswell.
