Simply because they can! Supply and demand for flights from the UK and overseas packages mean that prices will always be higher at Easter/School holidays/Christmas. In Turkey I assume that as a mainly moslem country they do not have the increased demand at Easter time so have no reason to increase hotel prices at that time.
