we have considered a tour of the winelands but I think we would book accomodation in advance. But then I like to be organised 
It depends on when you want to travel and where to. Decent accommodation gets booked pretty quickly in the smaller coastal resorts.

It does depend on when you want to travel. We travelled in May and did not need to book and found good accomodation but in the busy periods it will be difficult.
