You could try the Ebre Delta in Spain. Its not far from Barcelona and ive heard the fishing is absolutely fantastic. Havnt been there myself but did an awful lot of research when looking for a holiday home.

again.. at the risk of being boring... the canaries... you can fish from Los C, PDC or PR or Perto Mogan.. or if you are new to the canaries..anywhere.. it is approx 4 1/2 flying hours from the uk to anywhere in the canaries.. and also worth every penny you might spend. Once you go you always return....

France is very good for fishing and there are loads of great campsites in many different areas to choose from.

It's not my particularly hobby but just having a quick look around for carp fishing holidays France seems to come up a lot.
