I think the days of gabbing a last minute bargain are about to return. Tour operators had to commit to accomodation last year and with fewer travellers bookng in advance holidays willhave to be off laded to minimise losses.
Turkey will be an holiday hot spot this due to exchange rates and Euro Zone will struggle for the same reason. So for value fr money you will be advised to book early for ts destination. IN THE LONG RUN IT WILL COST YOU LESS
This post was triggered by reading Jay Trip's comment but I think it also applies as general advice.
The price of a holiday can vary due to the flight or even hotel filling up on certain days. There are several flights from Bristol to Dalaman and I recently found that by just changing the date between the various flights during that week the price could shift by up to £100 for exactly the same holiday!
So if you're counting the pennies and can be even a bit flexible on dates, it might be worth the effort to price up all the options.
Cheers.
The airlines have greatly reduced capacity due to the credit crunch and it doesn't matter how many apartments are avaiable out there, if there isn't a flight (either reasonably priced or expensive) to get you there then apartments, hotels will remain half-empty.
I have booked it with Portland as the agent was brilliant, she let me have the on-line -discount even though I was booking by phone. When I told her I wanted to go to Austria in July she told me to ring her about 1 month before I want to go as there are always good late deals with Crystal and Thomson Lakes.
There will always be deals to be had as long as you avoid Bank Holidays and school holidays.

Thomas Cook saved us over £300 in the end - and was much cheaper than the little groups - ie OTB and Holidays4u. The flights themselves were coming up at nearly £500 each, but we got the holiday for 2 of us, with transfers, inflight meals, and HB for £1200.
More than I wanted to spend really, but nothing is cheap at the moment. 17 weeks to go!!
The 4* and 5* A/I hotels around side, lara beach and belek the prices have rocked since xmas with some costing double to when they went on sale last april with direct holidays and thomas cook. Thomsons were expensive when their brochure came last spring and are even more expensive now.
