most Veggies find the Greek style of food accommodating, with lots of salads, fresh veg, and things like Humus/Taziki/ dolmus fresh goat/sheep/cow cheeses, and if you allow fish in your diet [some do] some strange looking but tasty things can be found
I dont eat fish so i guess i will stick with the other lovely stuff you mentioned!!!!

Like Wiz says you'll be spoilt for choice. I always eat the salads and fruits in restaurants and have never once had a funny tummy. If you buy your own form the supermarket or market, wash well in bottled water.
Cyprus potable tap water is safe to drink but can give some people a jippy tum, the island gets its name from the ancient Greek word for Copper, and it is this that can give it a strange metallic taste although not enough to do permanent harm, i drink it in Cyprus [but then i drink water all over the UK and some of it is awful] however the OH always uses bottled, its cheap enough anyway

plenty of salads, fish if you eat it, and most places will do something if you ask !...
My mum is also a vegetarian and they have quite a nice choice of vegey meals that are a little bit different to a lot of the other restaurants.
If you like currys the Ganga in Protaras also does a lovely vegey menu
The other restaurant my parents use a lot is Blueberrys in Ayia Napa
