I'm going to Nice next W/e. Have heard there is a great walk out to Cap Ferrat and back, and am hoping to do that.
For serious walkers, I'd recommend the Sunflower series of guide books. I'm not a serious walker & bought one by mistake. Sounds perfect for you as there were lots of walks all graded for difficulty. Hope this is of some help!
