I always go to Rhodes in October and have only twice had rain. The weather is usually lovely. The sun sets at around 7.30p.m. in october so an early evening wedding should be perfect.

I've often been to Lindos in October - it won't be shut down, though it will be quieter than peak season and weather should be fine. There is a higher chance of rain in October but i've only once seen heavy rain at this time.
First 2 weeks you'll normally get nice sunny weather (75-80C daytime) though it can cool down at night. As Anne says go for late afternoon or early evening as it will get dark around 7-7.30pm.
