I would say plan your holiday so that you have overnight stops.
But please don't worry about your baby crying all through a plane journey. I don't have kids and it doesn't bother me. We all know they are not doing it on purpose and that the parents don't need others tutting.
On the way back from Singapore a few years back a little lad of about a year or so cried pretty much no stop for the entire 13 hours. There was no consoling him at all. I didn't hear one tutt or tsk from anyone and whilst we didn't really get much sleep my concern was for him and his mother rather than myself.
Typically, as we landed he fell fast asleep.
