Are you sure you're looking at the right information? I have the flight (aircraft) schedule on my desk and it's showing as the following:
Dep MAN Fri 09:35, Arr HRG 17:05, Boeing 757-200*, Flight No: TOM772
Dep HRG Fri 18:05, Arr MAN 22:10, Boeing 757-200*, Flight No: TOM773
* 757-200(W) / 75W from 12/03/2010 - 30/04/2010
As an addition, I was at Manchester Airport on Friday and saw the flight depart. It was operated by G-CPEP (757-200) as per the schedule. This is it departing off runway 05L:
I remember it well because the First Officer called in a potential security breech on the airfield when he reported a photographer in an unlikely position. He was in fact land-side rather than airside so wasn't a problem, but all the commications between the aircraft and ATC were accompanied by their callsign 'Thomson-772'.

All long haul aircraft have seat back IFE as standard. Even if an aircraft has a technical problem and is substituted for a short haul aircraft, they have seat back IFE in most cases. At present, MAN-GOI-MAN (TOM158/9) are operated by a former First Choice aircraft (Boeing 767-300/ER). You'll find further aircraft information on our What Aircraft? guide (see link below).

Darren assumed you were asking about a flight in the winter season (operating at the moment) as it was unclear in your first post, and there happens to be a TOM772 operating as a Boeing 757-200 (Winglets) to operating to Hurghada.
Hopefully everything is a bit clearer now
