(You know me so well Jayjan! )
1 bottle extra virgin olive oil
1 packet of dried malaguettas(small portuguese fiery red chillies)
1 packet portuguese paprika
1 tot of whiskey(or port or rum etc etc)
1 pinch of salt.
grind the malaguettas into small fragments and add to the olive oil, then add all other ingredients into the bottle, shake and leave to settle, after a whlie the chillies will rest at the bottom of the bottle leaving the liquid a nice golden colour.
it gets better with age
add to soups, stews etc just the job for these winter months.
for the "chicken " or other meat "piri-piri" dishes marinade the meat first and then cook, using a pastry brush add more during the cooking and turning process to taste.if eveyone is not keen on "piri-piri" cook everything as normal and put some in a small bottle on the table so people can pour on them selves just as you would mint sauce etc.
crikey i think i've turned into Delia
Thanks Nosivad, will try this and then compare it with the new version which Tino gave you
Nosivad just marinaded some chicken in your original recipe for our Saturday Night Supper, its in the fridge soaking in the stuff, make it hot hot hot!!!! OMG I may regret that. I will let you know what it tastes like. I have just made a different one with red wine vinegar, garlic & organo added, I blended it electronically and it turned into a real thickish paste looks wonderful, will let you know how that tastes when tested out.
Hello Pat 42 are you still with us, or have you emigrated, your spending too much time in the off topic lounge, did you see "place in the sun home and away" tonight, it was in Tavira & Cabanas? just made me think about you.
Did you see the "place in the sun home and away" a couple of weeks ago in Lagos. One of the houses, the one with blue shutters, was in Praia da Luz. They seemed to take great care not to mention this.
Brodev, no I missed it, remembered it after the programme finished, these senior moment are happening too often
Still here....I was down south all last week and missed the programme but Bill saw it and spotted people that we knew from the village!!!!!
Came back Friday night and Mother in Law passed away yesterday afternoon, so it's a bit hectic here at the moment.
Pat
How nice to see people you know on the programme, never been to Cabanas it looks like a small village community, but I see there are cranes on the horizon, thats progress I suppose.
