Was browsing the Rosemary Conley site yesterday to find Thai Aubergine Curry that I had seen ages ago and meant to try it out but never did (you have to put Thai Aubergine Curry in the search box on the home page) and today decided to try it out as I had a couple in the veg box. It was brilliant and you would never know it was low calorie. Don't know why I have never bothered to try it before on a diet or off.
Now in the favourites book.
After a few weeks of STS I gained this week 1.5lb, not bad considering 2 nights off plan and out twice and best of all I enjoyed every minute.
Maybe it is the 'kick up the pants' I need.
Thanks for the curry recipe - will certainly be trying that one, have not forgot to give you a list of ideas have been to work today and out in Chester tomorrow so on Thursday I will list them for you.

Thanks for the message. hope you enjoy the aubergine curry, I enjoyed it that much I am going to make it again tomorrow then I will be sick of the sight of it by Saturday.
Here are some ideas that may be of help:
Quorn Sausage Casserole with sweet potato/rice or pasta.
Pasta, bean and vegetable bake - topped with breadcrumbs and cheese.
Spicy Quorn Curry and rice
Quorn Pilaff
Tandoori Quorn and rice
Roasted Vegetable Pasta
Lentil Chill and rice
Quorn Moussaka
Vegetrian hot pot (scouse)
SW quiche - used a packet of pasta, cottage cheese and eggs
I don' actually use quorn mince (prefer Asda own or Tesco's however I do use and prefer the quorn pieces and fillets
If any or all of these appeal to you I could PM them to you.
Is it just main meal ideas that you want as I have loads of ideas for lunches - both hot and cold. Also you can adapt most of the above for family who may eat meat.

Lunches are fine, usually have home made soup which I make in large amounts then freeze in 1 portion sizes or have tinned fish, a wholemeal sandwich of some kind and some fruit.
Started off the walking very well last week but seems to have tailed off somewhat the last few days - keep putting it off 'til later which never comes!!!
Must get back to it.

Well finally a loss last night 2.5lb I was very happy with that, I did put in a lot of effort last week. I do believe it was down to my planning of meals as well.
Don't give in - we will get there in the end.

I would like to rejoin just booked my next holiday to Cuba and would like to drop 1 dress size before August!
I weighed myself on Sunday morning and discovered that I've lost 9lbs since Christmas
Following the Slimming World plan as a vegetarian too, so will be happy to share Slimming World veggie recipies!
We also invested in a Tefal actifry, which makes proper home made chips for 6 syns per full pan (serves about 4, so that's 2 syns per serving!) Excellent stuff

EASY MUSHROOM SOUP
1 ONION - CHOPPED
2 CLOVES GARLIC
200 GMS ¼'d MUSHROOMS
200 GMS SLICED MUSHROOMS
2 VEGGIE OXO CUBES
1 TSP CUMIN
WATER TO COVER
SALT AND PEPPER TO TASTE
2 TBS FROMAGE FRAIS - IF LIKED
Put everything except the sliced mushrooms into a pan and bring to the boil, cover and simmer for 10 minutes. Cool and blend.
Adjust the seasoning and add more water if required. Bring back to the boil then add the sliced mushrooms. Simmer for a couple of minutes until the mushrooms are cooked.
Add fromage frais if using.
I look at these everytime I go into Lakeland and wonder if it is expensive gadget just for making chips as I usually put mine in the oven. I have almost bought one, twice, and put it back on the shelf.
1 LARGE ONION - CHOPPED
1KG SWEET POTATOES - PEELED AND CUBED
25GM GINGER - PEELED AND CHOPPED - OPTIONAL
1 TBSP OIL
1 TBSP MILD CURRY POWDER
2 LTRS STOCK - HOT
2 - 410GM CANS CANNELLINI BEANS - DRAINED AND RINSED
1 LEMON
SALT AND PEPPER TO TASTE
BUNCH OF FRESH CORIANDER - CHOPPED - OPTIONAL
METHOD
Heat the oil and add the onion and ginger and saute gently for 5 mins until the onion is soft.
Stir in the curry powder and cook gently for 2 mins - add a little water to stop it sticking to the pan.
Add the potato and stir to coat with the onion and spices.
Put the stock in the pan and bring to the boil. Reduce the heat and cover the pan and cook for 20mins or until the potatoes are soft.
Cool and blend then add the grated zest and juice of the lemon and season with salt and pepper.
Stir in the beans and heat for about 5 mins until the beans are hot.
If you are using the coriander - stir in now and serve.
If I am making this for myself I make it up to the blended stage and freeze in 1 portion pots as I find the beans tend to break up if they are frozen in the soup. When I want it I reheat the soup then add some beans that I have cooked and frozen seperately or add some tinned ones.
Or I halve the recipe as I don't mind having the same soup a couple of days running and this keeps well in the fridge in a lock and lock box.

The Actifry is fantastic! We have tried the oven type chips and they're not a patch on the actifry chips!
We also use a nicer dicer to chip the spuds
If it's got a plug on I have one or want one and if it's not got a plug on, why not.
I am banned from QVC or any other shopping channel and this year was on holiday when it was Ideal Home Exhibition (who booked it that week ).
Looks like its back to Lakeland then.

Lost another pound, 10 weeks to go and 10 pound to get off.
I put on 0.5lb and I can honestly say I followed the plan 100% - not going to get 'down' but if this happens again I will be disappointed.
