Another great dish is Stifado and I finally got around to making some more so I could take the pictures and add the recipe to my website.

well I miss the simple things like the bread and the Greek salads . funny thing is I don't eat much salad at home . and I love all the sea food . I miss the sound of the crickets when walking back to the apartment after a night out. and that smell off pine trees . I miss the frosted pint glasses full with mythos . but just think this time next week ill be doing the above roll on next week.

Whenever we come back from Greece I tend to cook the same food for weeks after to keep the holiday feeling., until the family get totally fed up with it. I have bought cookery books for the local area we have stayed in and try to duplicate them at home. On one occasion when we had an anniversary do we did a whole greek theme with complete meze and then the main course and and dessert for about 20 people and dressed the whole tables and decorated the place. It was brilliant! The only thing is ouzo and retsina doesnt tast the same in the UK. I would love to be allowed to stay in a restaurant kitchen and watch how they cook everything. We watched a baker once make filo pastry and it was fascinating watching them layer it up between muslin. Cant wait to go to Corfu in September and taste their local dishes, I have bought a book already but want to taste the real thing again. Sanganaki, olives, stuffed courgette flowers, courgette balls!!!! mmmmmm.! Dont you love it all!

moussaka is absolutly amazing, i love the stuff, although ive had a pretty good one back here in the Uk.

Stifado and Saganaki are some of my favorites and no-one can resist a good greek salad.. mmmm this is making me hungry :) :) :)

In Crete last year we had for the first time beef which was cooked in spices like cinammon (mixed spices) and lemon. Really lovely and the beef just fell apart, bliss! I have tried to recreate it myself a few times but the first time is always the best!! I can still taste it! :D

I love Kleftico and lamb stamna ooooo i can almost taste it! But then again i dont think i've had anything in Greece that i dont like,Mark

There's not much I dont like either. What is lamb stamna, never seen that on the menu, will look out for it tho'. I had squid last year in a highly recommended restaurant in Crete and when it said grilled I thought it would come sliced like kalamari, but it came whole minus its legs. I did eat most of it but with great difficulty as it was still a bit inky so I fed it to the cat (under the table, I bet he was the fattest cat in Kalives from the squid). The best fish we had though was in Crete, a tiny taverna in a little unknown cove, down the cliffs, northwest of Kissamee. Just went and picked it out, it had just been caught and was simply cooked, fabulous with olives and wine! Oreos!

Sue,lamb stamna is lamb cooked in a clay pot along with tomatoes onions and potatoes and sprinkled with cheese,really nice ,or you could have it as beef,cheers Mark

Best greek recipe I've ever has was in Thassos, a dish called 'kokinisto'
similar to stifado but potatoes used instead of onions.Yummy :D

That's brilliant. I will look out for that on the menus and will definately make that now. Thanks very much. I had something similar in Crete last year that had beef and tomatoes on the bottom, and on the top was Rissoni, a tiny rice shaped pasta that had cheese sprinkled on the top. That was nice too.

When we where on Samos at the four seasons in Pythagorion they did this Lamb in the oven which was leg of lamb with boiled potatoes covered with cheese and put under grill for cheese to melt

ps its not kleftiko

Lamb shank done in the oven is usually called Kleftiko, and sometimes potatoes are added, sometimes not.. Or it could be Lamb Stamna, which is similar but with more spice and cheese (sometimes cheese is added to Kleftiko, its like anything else, people adjust, change and make things slightly differently)

It's very difficult to get pastissada in my local supermarket. They sold it for a few weeks and of course I got quite excited as I could make this dish we like but then they stopped it. Now, I can only get it when we go to Greece (have even found it in the big hypermarket in France), so I stock up on it then, weighs a bit in the luggage tho'. Will have to leave those extra pair of shoes out when we go to Corfu in September to make space for the bags of the stuff.
